How to make chole kulche at home

 People of all ages enjoy the traditional North Indian street meal known as chole kulche. Spicy chickpeas are cooked in a tart tomato-based stew and served with tender and fluffy kulchas in this mouthwatering recipe. Ingredients:


1 cup dry chickpeas

three water cups

one sliced onion

two diced tomatoes and two chopped green chilies

Ginger-garlic paste, one teaspoon

1 teaspoon cumin seeds

1 teaspoon dried coriander

Garam masala powder, 1 teaspoon

12 teaspoon of red chilli powder

3/4 teaspoon of turmeric powder

Salt as desired

1.5 tbsp oil

1 teaspoon lemon juice

leaves of the coriander, chopped for garnish

As for Kulcha:


2 cups of general-purpose flour

yoghurt, half a cup

Baking powder, 1 teaspoon

12 teaspoon baking soda

12 teaspoon salt

1.5 tbsp oil

14 cup of water

using butter to brush

Instructions:


Overnight soak the chickpeas in water. Rinse the chickpeas with fresh water after draining the liquid.


Add the chickpeas and 3 cups of water to a pressure cooker. Cook until the first whistle on high heat, then turn the heat down and cook for a further 15 minutes.


Heat 2 tbsp of oil in a another pan in the meantime. Stir in the cumin seeds and watch them puff up. Add the green chilies and chopped onions, and cook until the onions are golden brown.


Sauté for another minute after adding the ginger-garlic paste. Cook the tomatoes, which have been chopped, until they are mushy and tender.


Add salt and other seasonings to taste, including coriander, garam masala, red chilli, turmeric, and red pepper flakes. Mix well, then heat for two to three minutes.


Combine thoroughly before adding the cooked chickpeas. The mixture should boil when you add 1 cup of water. Simmer it for 10 to 15 minutes on a lower heat.


Coriander leaves should be cut and lemon juice added. After thoroughly combining, turn off the heat.


All-purpose flour, baking soda, salt, and oil should be combined in a bowl before making the kulchas. yoghurt, then thoroughly combine. Till the dough is smooth and malleable, gradually add water while kneading the dough.


15 minutes should pass while the dough is covered with a damp cloth.


Create little circles by dividing the dough into balls and rolling each one out.


Over medium heat, preheat a griddle or tawa. Roll out a kulcha and place it on the tawa to cook for a minute. Cook it for another minute on the other side.


The kulcha should be fully cooked after another 30 seconds on each side after being brushed with butter.


With the remaining dough balls, repeat the procedure.


Serve the fluffy and silky kulchas beside the steaming chole. Add chopped onions and coriander leaves as garnish.
